Mealie Pap
SERVES 4
Mealie pap that is cooked in a HotBag has a moister, creamier texture.
Bring 2 cups salted water to the boil.

Pour in 1 cup mealie meal, little by little in a thin stream, stirring all the time with a wooden spoon, until a thick consistency is reached. Cover and allow to steam on low heat, giving it a stir again a couple of times until there is no sign of dry mealie meal. After 5-10 minutes on the stove, transfer the pot to the HotBag to complete the cooking for a further 30 minutes. You can safely leave it for longer, as there is no danger of burning. The HotBag convienently keeps it warm and moist.
