Oven-baked, HotBag-risen, No-kneading Whole Wheat Bread
SERVES 4
This recipe requires an oven for baking the bread but a HotBag will rise the bread dough beautifully. Use a deep mixing bowl or cover with cling wrap to prevent the rising dough from touching the HotBag. The real beauty of this bread is that there is no kneading.

  • 4 cups brown/nutty wheat flour
  • 1/2 cup wheat germ
  • 1/2 cup seeds (eg. sunflower, poppy, sesame, or raisins)
  • 10g / 3 tsp instant dry yeast
  • 1 TBS salt
  • 1 TBS sugar
  • 2 cups luke-warm water (1/2 boiling / 1/2 cold).

Dissolve the sugar and yeast in the first cup of luke-warm water. Set aside to develop a head while you put the dry ingredients together.

Mix all ingredients to form a thick, sloppy mixture.

Leave in a HotBag for 20 minutes to rise.

Grease a bread tin (23 x 10 cm / 4'' x 9'') and dust with flour and/or sesame seeds.

Gently pour the risen bread mixture into the baking tin.

Sprinkle sesame seeds on top.

Bake in a 200° C oven for 30 minutes.
